This English translation  makes available to new readers one of the most fascinating and least known cookbooks of medieval Catalan cuisine. Written and compiled in the mid-fourteenth century, it preserves 279 recipes that provide an exceptional testimony to the gastronomy of the elites of the Crown of Aragon. Through its pages, readers discover a refined, lavish, and sophisticated cuisine based on the combination of local products with exotic ingredients arriving through the principal trade routes of the Mediterranean.

The work reflects the tastes and eating habits of the affluent classes of the period, characterized by the abundant consumption of meat, poultry, wine, and elaborate sauces. The cookbook also devotes considerable attention to fish dishes associated with periods of religious abstinence, as well as to complex culinary techniques that combined different cooking methods to achieve more refined flavours and textures.
