The book of Sent Soví is the oldest surviving cookbook written in the Catalan language. It stands, therefore, at the very beginning of the country's culinary tradition, and within its pages can already be found certain defining features that have endured to the present day. Its influence can be traced throughout other medieval cookbooks and even in later culinary works. This status as an inaugural text, partly the result of historical circumstance, does not contradict the fact that it is also a synthesis of the cuisine of its time—specifically, the haute cuisine associated with the nobility and the wealthy classes.
This edition includes an English translation of the original Catalan text, with the aim of broadening the reach of this work and bringing the rich heritage of medieval Catalan cuisine to a wider international audience. To facilitate access to the text, the medieval version is presented alongside an adaptation into modern English.
This volume marks the beginning of the Set Portes Collection of Historical Catalan Cookbooks, which offers a comprehensive journey from the earliest recipe collections to those of the second half of the twentieth century, highlighting the evolution, transformations, and continuities of Catalan cuisine.
